Double Chocolate Peppermint Cookies {Gluten-free}

It's the most wonderful time of the year. In foodie language that means it's time to bust out my two fave ingredients: chocolate and peppermint. And there's only one thing that makes these ingredients yummier - combining them! I created this recipe with some of my gluten-free friends in mind. I realized that a lot of holiday parties exclude folks who are gluten-free, grain-free, paleo or even vegan. These protein-packed cookies cover them all. And if you're not any of those persuasions, I dare you to try one of these. Hint: you might want to make a double batch from the start.


Double Chocolate Peppermint Cookies

Ingredients:
-2 1/2 cups finely ground blanched almond flour*
-1/4 cup coconut flour
-1/4 cup cacao powder or unsweetened cocoa powder
-1/2 teaspoon sea salt
-1/2 teaspoon baking soda
-1/2 cup raw honey
-1/4 cup raw virgin coconut oil, melted
-1 teaspoon vanilla
-1 cup chocolate chips (gluten-free)
-1/2 cup walnuts or pecans, chopped (optional)

1. Heat oven to 350 degrees.
2. Combine flours, sea salt, baking soda, and cocoa powder.
3. Add in honey, coconut oil and vanilla. Stir gently just to incorporate. You don't want to overwork the dough.
4. Mix in chocolate chips and nuts if desired.
5. Line a baking sheet with parchment paper or foil. Scoop tablespoons of dough onto cookie sheet.
6. Bake approximately 8-10 minutes until edges are just golden brown. Remove from oven and let cool a least 15 minutes without touching them. IF you try to take the cookies off the pan early, they will not set and turn out a gooey mess.

Makes 1 dozen.

Award-winning Chai Cheesecake {Gluten-free crust}

A few years ago, I entered a baking contest at the Big Fresno Fair. This Chai Cheesecake recipe won second place in the Malt-o-Meal Creations contest. The crust was made from crushed cereal made by Malt-o-Meal.


Since then I've used this Chai Cheesecake as a fall dessert special for company, baby showers, potlucks and other community events. The warm spices reminiscent of the Indian chai or tea with the creamy consistency of the cake seem to whisper fall. Don't you just want to curl up with a good book, a slice of cheesecake and a warm mug of tea?

As we continue down our healthy journey, I have been going back to some of my old favorite recipes and looking for ways to tweak them. This is a new version of the cheesecake with a nutty, almond crust instead of using the cereal. This spiced cheesecake can now be considered gluten-free although the crust will appeal to all kinds of eaters as long as they do not have any nut allergies.

I've also discovered a new "healthy" version of whipped cream, using the thick part of a can of coconut milk whipped instead. It adds a new dimension to the flavors of this dessert. Enjoy!





Ingredients:

4 cups almond flour (I like the Trader Joe's brand because it's very finely ground.)

1/4 cup raw turbinado sugar or coconut palm sugar

1/2 cup butter or coconut oil, melted

1/4 teaspoon sea salt

1 tablespoon maple syrup or raw honey + more for cream topping


4 (8-ounce) packages cream cheese, softened

3/4 cup organic sugar or 1/2 cup raw honey

4 cage-free large eggs

1 teaspoon pure vanilla

1 teaspoon ground ginger

1 teaspoon cardamom

1/4 teaspoon ground cloves

1/4 teaspoon ground nutmeg


2 teaspoons cinnamon


½ pint whipping cream or 1 cup very thick coconut milk (refrigerated overnight)

1 tablespoon maple syrup or honey


Directions:

1. Heat oven to 350 degrees.

2. Mix together almond flour, sugar and butter/coconut oil in a bowl. Press into the bottom of a greased (round) 9-inch spring form or other cake pan and bake for 5 minutes to set. Remove from oven and cool.

3. Meanwhile, blend cream cheese and sugar with hand mixer. Add eggs one at a time and blend until mixture is smooth.

4. Add vanilla, ginger, cardamom, ground cloves, ground nutmeg, cinnamon. Pour over crust. Smooth top with a spreader.

5. Bake for one hour. (DO NOT open oven while your cheesecake is baking. This can cause cracks in the top. Resist the urge.)

6. Remove and cool. Chill at least two hours before slicing.

7. Whip cream or coconut milk and add honey. Spoon a dollop on top of cheesecake slices with a sprinkle of cinnamon.




This Chai Cheesecake topped with birds served as the main dessert for a recent baby shower celebrating twins. We skipped the cake and I doubled the crust part to make it look more like a nest.

Nutty chocolate chip cookies {Gluten-free, paleo}



We have been experimenting with some grain-free or gluten-free recipes over the last several months. My hubby caught a parasite when we were in Haiti last summer and we were advised a natural way to get rid of it would be to stop feeding it sugars and grains - even natural ones. Long story short, Ericlee tried out a grain-free diet (also called a paleo diet) and got rid of the parasite. Paleo is all the rage right now with the CrossFit community.

Serving up grain-free eats seemed impossible to me at first. I do like to bake and using some of the alternative flours like coconut flour and almond flour was frustrating. The flours did not behave the way I was used to.

I was determined to find a chocolate chip cookie that tasted decent. My friend Jen turned me on to this recipe by BakerGal and then I ventured out to create my own. My hubby goes nuts (pun intended) about these chewy cookies. I love that they are protein-packed and have that familiar nutty-melty-chocolatey flavor. You won't feel guilty about downing a plate of these babies!

We are not eating 100% paleo or gluten-free now but we do see a lot of benefits of this style of eating. I love that I have this dessert option to share with friends who are paleo or gluten-free. And my kids are choosing these over regular chocolate chip cookies so I'd say they are winner in our household. My kids were fighting me yesterday for a scoop of cookie dough even before they were baked up!






Almond Flour Chocolate Chip Cookies

Ingredients:
-2 1/2 cups finely ground blanched almond flour*

*My favorite almond flour can be found in the nut section at Trader Joe's. This flour is more reasonably priced than other brands and is very finely ground for a smoother texture in the cookie.

Recipe of the Week: Double Chocolate Almond Brownies

I have a hankering for chocolate all the time, but especially when I'm pregnant. Now that I'm in my second trimester I've got some of my cooking mojo back. The fun part is all these ingredients were in my pantry. My friend just had a C-section the other day so I'm bringing these babies to the hospital for her. Move over hospital food. Try these brownies with a healthy twist!



Ingredients:
-1 cup organic butter
-4 cage-free eggs
-3/4 cup unsweetened cocoa powder (could use squares of unsweetened chocolate and skip the oil)
-4 tablespoons olive oil
-1 cup organic sugar
-1 cup whole wheat flour
-1 teaspoon aluminum-free baking powder
-2 teaspoons ground flaxseed

-1/2 cup semi-sweet or dark chocolate chips
-1/2 cup sliced almonds (could use walnuts, pecans or even dried cranberries)

Directions:

1. Heat oven to 350 degrees.
2. Prepare an 8x8 square pan with parchment paper or greasing with olive oil.
3. Melt butter and add to a large bowl.
4. Add cocoa powder, olive oil.
5. Whisk in eggs one at a time.
6. Add sugar, flour and baking powder.
7. Stir in flaxseed.
8. Pour into prepared pan. Smooth top of batter.
9. Sprinkle chocolate chips and almonds on top.
10. Bake approximately 20 minutes or until top of brownies is springy to the touch.

Celebrating Holy Week: Easter Menu Ideas

This week marks the most important holiday for Christians - Easter. We celebrate the resurrection of Jesus Christ. Holidays in our family mean a time for fellowship around the table and lots of food traditions. I can remember as a little girl how we always filled our house with friends and family for the Easter season. My favorite foods included Grandma Sara's homemade Easter bread and our own chocolate-covered eggs made with delectable fillings like peanut butter or mint.

This year we will be celebrating Easter with a supper at my mother-in-law's house. She will prepare the lamb Armenian style for us and I'm sure we will enjoy her famous Armenian Rice Pilaf. Since I'm not working on the main menu, I thought I'd take this opportunity to review some of my fave recipes to help you plan yours. Maybe you will happen upon one that will appeal to your family this season.

Brunch ideas:
Breakfast Enchiladas - This is a fun recipe to make breakfast fancy with a Mexican kick. We even serve up these egg and bean enchiladas for dinner sometimes.
Farmer's Market Egg & Sausage Casserole - Spring has sprung at the local farmer's markets. Don't miss the chance to incoporate organic, in-season veggies in your family brunch.
Carrot Tea Party Muffins - If you're joining a family brunch and want something easy to pack into a festive basket, try out these fun muffins. They can easily be made a day ahead.
Cranberry-lemon Scones with Lemon Whipped Cream - My girls love to help me make these homemade scones. Make an Easter morning brunch into a fancy English tea party with a special touch like these scones.

Spring mains:
Italian Chicken with Strawberry Salsa - I wait all year for the strawberries so I can make this strawberry salsa over chicken. It's also great over lamb or fish. Experiment!

Carrot Cake with Honey Cream Cheese Frosting - You can use this recipe in two round pans and create a bunny cake like we did above. The kids can have fun decorating with natural candies (check out Trader Joe's or Whole Foods) or even chocolate chips.
Chai Cheesecake - This is one of my fave cheesecakes because it combines warm spices with a light cheesecake. It's a fun twist on a traditional dessert. Move over, Cheesecake Factory!
Chocolate-Strawberry Ice Cream Sandwiches - If you want to make something fun the whole family can enjoy, try making these homemade ice cream sandwiches. You can make them Saturday afternoon and they will be frozen and ready for Easter Sunday Supper.

Chai Cheesecake wins 2nd place at the Big Fresno Fair

I always love entering the cooking contests at our Big Fresno Fair. It's a fun challenge to make something unique with the designated food product - not to mention a little extra dough if you win. This year I entered the Malt-O-Meal Creations contest. I thought it would be using something porridge-like Malt-o-Meal hot cereal we all grew up on. But the company is out to promote their cold cereals so I had to come up with a unique recipe using on of their cold cereals.

After visitng three local grocery stores, I finally checked the web site and found the cereals were sold at our local Walmart. I came home with a huge back of Honey Nut Scooters, which are similar to Honey Nut Cheerios or Honey Trader O's, which I prefer. Then I had to dream up something to make.The contest is judged on Creativity, Taste and Ease of Recipe.

I have to admit I let weeks go by. I was stumped. Then one day my friend Bev showed up at my house with a slice of cheesecake. We marveled at how inexpensive cheesecake is to make and how glorious and rich the result. I decided to rev up a cheesecake using the cereal in the crust. I knew this couldn't be just any cheesecake. It had to be different. I decided to employ one of my fave flavors - Chai Tea.

I'm a Chai lover. If you haven't had Chai, it's a tea using Indian-inspired spices. The word chai literally means tea. This tea feels very fall to me - full of cinnamon, cardamom and ginger. Everyone mixes their chai a little differently. I've noticed Chai is becoming all the rage in local cafes and even Jamba Juice serves a Chai-licious smoothie that's inspiring.

I made a couple of cheesecakes to perfect the crust and Chai filling mixture. Of course, I cut the sugar used in most cheesecake recipes in half. The following recipe was the result. My family and I had fun heading down to the Big Fresno Fair and watching the judging. Surprise, surprise - 100 percent of the entries were desserts. The judges did deliberate. 


They announced the winners and my "Chai Cheesecake with Honey Nut Crust" was awarded 2nd place and $50. I was very excited to stand next to Pearl, the first place winner. She was the sweetest old lady who was blind and had entered 20 other desserts in the fair as well. Her Raspberry Crunch Pie deserved first!




Chai Cheesecake  

INGREDIENTS:

4 cups cereal, crushed (I like Trader O's, Honey Nut Scooters or good old fashioned graham crackers will work too.)

½ cup butter, melted

4 (8-ounce) packages cream cheese, softened

3/4 cup organic sugar

4 cage-free large eggs

1 teaspoon pure vanilla

1 teaspoon ground ginger

1 teaspoon cardamom

1 teaspoon allspice

1 teaspoon cinnamon

½ pint whipping cream

1 tablespoon honey


Directions:

1. Heat oven to 350 degrees.

2. Crush cereal in a ziplock bag with a mallet or in a food processor. They should look like coarse breadcrumbs. Stir in melted butter to coat cereal.

3. Press into the bottom of a greased (round) spring form or other cake pan and bake for 5 minutes to set. Remove from oven and cool.

4. Blend cream cheese and sugar with hand mixer. Add eggs one at a time and blend until mixture is smooth. Add vanilla, ginger, cardamom, allspice, cinnamon. Pour over crust.

5. Bake for one hour. Remove and cool. Chill at least one hour before slicing.

6. Whip cream and add honey. Spoon a dollop on top of cheesecake slices with a sprinkle of cinnamon.

Luscious Lunches Cooking Club: Great lunch ideas served up for dinner

This month's Cooking Club was a smorgasbord of lunch recipes. In case you're just tuning in for the first time, we have a monthly Cooking Club at our house with 10 families. (No, they don't usually all come at the same time. However, we are starting to be outnumbered by the kids!) Each family brings pre-assigned ingredients. All the mamas cook while the daddies watch the kiddos. Everybody eats and then the daddies clean up while the mamas sit on the couch and chat. Good times.

Each month we choose a theme and this time around it was Luscious Lunches - inspired by a cookbook my mom gave me for Christmas. It's always fun to mix it up a little and serve something different for lunch. Who wants the same old boring sandwich day after day - especially when you are packing your hubby's lunch or your serving it up for multiple kiddos.

At Cooking Club, we always try out a new "adventurous recipe," which was this Asparagus Soup from Alfred Portale's 12 Seasons Cookbook. Our healthy option was the colorful Vegetarian Lavash Sandwiches created by our friend Cori. Everyone gobbled them up. We even made some peanut butter and jelly ones for the less adventurous types. We also look for recipes that use famer's market finds. Since spring has sprung in California that means strawberries and rhubarb are popping up in stores and on corners. We employed those babies in our fab dessert.

Cori's Lavash Sandwiches


Ingredients:
-hummus
-mayonnaise
-red pepper
-sprouts
-cucumber
-basil leaves
-tomato
-kalamata olives
-salt
-lemon pepper
-paprika
-1 package of lavash bread (find it near the tortillas at Trader Joe's or other local grocery stores)

1. Thinly slice all the vegetables.
2. Spread the lavash with a thin layer of 1/3 mayonnaise and 2/3 hummus.
3. Arrange the veggies on top.
4. Sprinkle with salt, lemon pepper, paprika.
5. Roll up and cut into halves or thirds. Serve.


Sweet Potato Fries with Spicy Avocado Dip

Ingredients:
-15 sweet potatoes, peeled
-1 tablespoon whole wheat pastry flour
-2 tablespoons of olive oil
-2 cups mayonnaise
-2 avocadoes
-1 jalapeno, finely chopped (approx. 1 tablespoon)
-1 tablespoon lemon juice
-1 teaspoon paprika
-1 teaspoon salt

Directions:
1. Wash, peel and cut potatoes in large wedges. Toss with whole wheat pastry flour.
2. Heat oven to 375 degrees.
3. Spray two cookie sheets with olive oil. Place wedges onto the cookie sheets.
4. Bake in oven for approximately 45 minutes until cooked through. If they seem mushy, turn on broil and "crisp" for 5 minutes watching closely so they don't burn.
5. While the potato fries are cooking, assemble the sauce. Mash avocadoes in a bowl.
6. Mix in mayonnaise, lemon juice, jalapeno, paprika and salt. Blend well and put in small bowls to serve with fries.

Day Three of The Great Pantry Challenge solidifies more of my theory from yesterday: Living out of our pantry has been no real sacrifice because we live in community. Tonight we enjoyed a fabulous dinner with our Small Group friends. We get together with three other couples and their kids every other week for a shared meal and a chance to support each other in this season of life. We each bring an assigned part of the meal - Salad, Side Dish, Entree or Dessert. We rotate houses so the family hosting doesn't feel the burden of the Entree (and the dishes) too often. For the last five years we have celebrated community through food, conversation around the table, prayer and encouraging our kids to play together.

Tonight it was our turn to bring the dessert. Since it's fall, I had to bust out my favorite fall flavors - pumpkin & chocolate. (Yes, that's what was in the pantry!) At first, I thought about some kind of chocolate tart but I didn't really have time to mix up a crust, chill it and roll it out. After scrounging through the refrigerator and cupboards, I also found some wonton wrappers from the cooking contest I entered at The Big Fresno Fair two weeks ago. I thought about a dessert I saw an Italian chef once make - Chocolate Ravioli. What about Chocolate-Pumpkin Ravioli? That's a Harvest party in your mouth as far as I'm concerned. (Find recipe below.)  The warm chocolate melded with the spiced pumpkin inside a crispy wonton is so flavorful we all wished there were more.

My favorite part of this challenge is that it forces me to be creative with what I have. Who says we can't eat healthy and delicious food? Who says eating out of the pantry has to be boring? Not me. That's why I tackled dessert tonight with the enthusiasm of a die-hard football fan at a home game. This is how new recipes are created. I encourage you to try something new this week. Grab a few ingredients you always have on hand and see what happens when you marry them together. It might just be a family hit!

A Note from our Nutrition Guy (aka my hubby Ericlee):
Chocolate is not only a yummy treat, it also happens to be a great choice for dessert if you do it right. Some chocolate choices are high in sugar, high fructose corn syrup and other harmful chemicals for your body. Chocolate with a higher percentage of cocoa is better for you. Choose chocolates that are labeled "semi-sweet" or "dark chocolate" and avoid milk chocolate or chocolate with other additives.

You've probably heard that chocolate is full of antioxidants. What are antioxidants? They are compounds that protect our cells from damage. Call them the policemen of your body. Policemen keep our city safe and fight off the offenders. Antioxidants do the same. They keep our body healthy and fight off cancer cells.

With Halloween right around the corner, you might choose a chocolate bar over a piece of hard candy filled with poisonous dyes. Trader Joe's as well as other stores are selling small-sized chocolate bars (with no additives) just for the occasion. That is, if you're looking for an alternative to the mainstream Halloween treats. We trade our daughter for non-food items or Jamba Juice cards.



Chocolate-Pumpkin Ravioli

Ingredients:
1 cup organic pumpkin puree (canned or from a baked sugar pumpkin)
1 tablespoon maple syrup
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
4 oz. semi-sweet chocolate bar, coarsely chopped
1 tablespoon cream cheese or mascarpone cheese, softened
1 egg
30 wonton wrappers
olive oil spray or 2 tablespoons olive oil (& pastry brush)
3 tablespoons organic butter

Garnish:
mini chocolate chips
mint leaf
whipped cream

1. Mix together filling ingredients: pumpkin, maple syrup, cinnamon, nutmeg, salt, chocolate and cream cheese in a small bowl.
2. Cover two cookie sheets with parchment or waxed paper.
3. Beat egg in small bowl and set at work station with pastry brush.
4. Brush the edges of a wonton wrapper with egg. Add teaspoon of filling to corner of wonton wrapper. Fold wrapper at a diagonal, forming a triangle shape. Press edges together . Lay out on cookie sheet. Continue filling wontons, (I like to do two at a time) until they are all filled.
5. Heat oven to 350 degrees. Spray wontons with olive oil spray or brush with olive oil. Bake for approximately 8-10 minutes or until edges are golden brown.
6. Remove from oven and serve 3-4 at a time on a dessert plate. For garnish, sprinkle with mini chocolate chips, a mint leaf or add a spoonful of whipping cream.

*This is a dessert you will want to do the final steps right before serving so the chocolate is warm and melty.

Recipe of the Week: Chocolate-Pumpkin Bread Pudding


Ok, friends. There's probably nothing I like more during this season than the flavors of pumpkin and chocolate melded together in a yummy comfort food dessert. That's exactly why my daughter and I decided it was time to do some experimenting in the kitchen. I shared this recipe at our MOPS (Mothers of Preschoolers) meeting a few weeks ago. This is a perfect way to put day-old or hardened baguettes to good use. If you're looking for a snazzy dessert for your Harvest Party or even a decadent Fall Brunch idea, check this out!

Chocolate-Pumpkin Bread Pudding

Ingredients:
-1-pound loaf whole wheat bread (or consider using leftover bagels, baguette, croissants or other whole grain breads)
-olive oil spray
-6 large eggs
-2 cups raw milk
-1 cup heavy cream
-2 cups pumpkin puree (15-oz. can organic pumpkin)
-1 tablespoon vanilla
-1/2 cup organic brown sugar or 1/3 cup honey
-1 teaspoon cinnamon
-1/2 teaspoon nutmeg
-1/2 teaspoon salt
-1 bag semi-sweet chocolate chips or grain sweetened chocolate chips
-1/4 cup maple syrup

1. Cut the bread into 1-inch chunks.
2. Spray a 2-quart oven-proof dish with olive oil spray. Add bread chunks to  dish.
3. In a separate bowl, mix together eggs, milk, heavy cream, vanilla and pumpkin.
4. Stir in cinnamon, nutmeg and salt. Stir in chocolate chips
5. Pour mixture over the cubes of bread. Let sit 20 minutes to soak into bread.
6. Meanwhile, heat oven to 350 degrees. Bake for 1 hour or until knife inserted in center comes out clean.
7. Drizzle maple syrup on top & serve.

Fourth of July Party Fare



Fourth of July is another fun holiday for traditional fare. This year we are celebrating Independence Day with our friends, the Schultzes, and our parents. Everyone is contributing to our meal and we're eating poolside. A tradition in my family is making this Berry American Flag Cake. It's a fun project for kids of all ages! This year we're adding some homemade Chocolate Gelato for dessert made with Mom and Dad Lazo's new ice cream maker. If it's going to be a sizzlin' 105 degrees, we've got to incorporate something cool. Bon Appetito!

The Recipes:

ROASTED RED PEPPER HUMMUS DIP

7 oz. dried garbanzo beans or 1 15 oz. can
2 large garlic cloves
7 tablespoons olive oil
3 tablespoons tahini (ground sesame seeds found in paste form in most grocery stores near the peanut butter or in the Middle Eastern food section)
1 tablespoon lemon juice
1 teaspoon salt
1/4 teaspoon black pepper
6 oz. of Fire Roasted Red Peppers (available at Trader Joe's in a jar)
paprika, cilantro, and/or salsa for garnish


Directions:
1. If using dried garbanzo beans, boil for 45 minutes to soften. Then combine all the ingredients in a blender or food processor except items for garnish. Whirl until smooth.
2. Add roasted red peppers to blender.
3. Serve with vegetables cut into sticks like carrots, celery or cucumber or even pita chips or blue tortilla chips. Top with a few whole marinated red peppers for garnish.


GRILLED SALMON WITH TROPICAL SALSA

1. Coat 1 large salmon filet big enough for your family (We get it from Costco or Trader Joe's - You can substitute in the kind of fish of your choice. Mahi mahi is another one of our faves.) with olive oil.

2. Sprinkle with herbs, such as basil, oregano, coriander, garlic, lemon pepper and/or chili pepper.

3. Add sea salt and pepper.

4. Let salmon sit in a dish or on a platter and prepare the salsa in a small bowl.

5. Chop 1 red onion, 1 red pepper, 1 orange, 1 cup pineapple, 1/2 cup finely chopped cilantro and 1 mango. Make sure everything is in bite-sized pieces or smaller and stir together. Add 1 tablespoon olive oil. (You can make this salsa ahead of time and reserve in ziplock bag)

6. Grill the salmon approximately 10-15 minutes, depending on your grill and the size of your filet. Watch for when the white fat juices start to ooze out the top and the salmon meat is flaky at the touch of a fork. Then it's done. You only need to grill on one side.

7. Top with tropical salsa and serve with rice or potatoes for a colorful, fabulous summer dinner.

Recipe of the Week: Chocolate Chip Zucchini cookies - Zookies

Zucchini is starting to appear at the farmer's markets and in my friends' backyards here in Fresno. What to do with this abundance of zucchini? My friend Brandy Freeland shared this recipe for "zookies" with me. I changed it up to make it my own. These cookies are light and buttery in taste with the consistency of a coconut macaroon. These are a great way to sneak some squash into your kids' snack time. And who can go wrong with some dark chocolate morsels to feed your chocolate cravings?

Ingredients:

1/2 cup organic butter, softened

1/4 cup 100% pure maple syrup

1 cage-free, organic egg

1/2 teaspoon organic vanilla

1 cup whole wheat pastry flour

1/2 teaspoon baking soda

1/2 teaspoon sea salt

2 cups organic zucchini, shredded

1 cup oats

3/4 cup coconut, shredded

1 cup dark chocolate chips


Directions:

1. In a large bowl, cream together the butter and maple syrup.
2. Add the egg and vanilla. Beat well.
3. Sift in the flour, baking soda, and salt. Mix just until incorporated.
4. Stir in the shredded zucchini, oats and coconut.
5. Stir in dark chocolate chips.
6. Drop the dough by the tablespoonful onto greased cookie sheets. Flatten slightly with spatula.
7. Bake at 350 degrees for 12-14 minutes until golden brown on the edges.

Makes 2 dozen cookies.

Cooking Club: The Great Gilmore Grill-off for Father's Day


Tonight we hosted the first Great Gilmore Grill-off on our deck with our Cooking Club friends. We had four families who had a "throwdown" to put Bobby Flay to shame. The night included: Four main dishes to die for. Three Hot Daddy Judges in honor of Daddy's Day. A gaggle of kids in the pool. Even homemade "Death by Chocolate Gelato." And a whole lot of fun!

Warm Italiano Spread (Prepared by Shawna)

Ingredients:
1 pkg (8 oz) Neufchatel Cheese
1/4 C. Pesto
1 Plum tomato, chopped
1/4 C. Italian 5 cheese blend, shredded

1. Heat grill to Medium. Unwrap Neufchatel cheese and place on 8" square of heavy foil; top with pesto, tomatoes, and shredded cheese.

2. Place foil on grill; cover with the lid. Grill 8-10 minutes or until shredded cheese is melted and Neufchatel is softened but holding it's shape.

3. Transfer foil to platter and serve with crackers.

**Can make it year round by baking at 375 degrees for 12-14 minutes instead of grilling.

Dorina's Baby Greens & Grilled Nectarine Salad

Ingredients:
-1 red onion, thinly sliced
-1 tablespoon olive oil
-Mixed organic baby greens
-5 large nectarines
-5 tablespoons butter, softened
-1 cup whole pecans
-1/4 cup maple syrup
-1 8-ounce container crumbled goat cheese

1. Add maple syrup to a small pan. Pour in pecans. Turn to medium heat and stir for approximately 5 minutes until pecans are coated and slightly browned. Remove from pan and set aside.

2. In same small pan, add olive oil and red onions. Saute approximately 10 minutes until onions are translucent and carmelized. Set aside.

3. Cut nectarines in half. Spread softened butter on nectarine halves. Grill on medium-high heat for approximately 5 minutes until heated through and grill marks show.

4. Assemble salad adding greens, pecans, onions, nectarines and crumbled goat cheese. Toss. Serve with dressing of your choice.

The competition was fierce and fun. We had four families/individuals competing for the top 3 spots and prizes. And the winners...

FIRST PLACE
Benedicts' Bombdiggity Shroom Burger by the Benedicts
Ingredients:
4 Portabello Mushrooms, cleaned and destemmed (marinated)
1 large red onion
Fresh Basil
4 Foccacia Rolls
Mayo/Garlic spread

Directions:
1. Marinade mushrooms in sauce for at least an hour. (We used a local marinade "Jamaican Jerk Sauce" from the Clovis Market Fest.)
2. Caramalize onions for 30-40 minutes until onions are a slight brown color
3. Grill mushrooms for 5-7 minutes on each side until tender
4. Place foccacia rolls on grill until slightly toasted
5. Mix mayo/garlic and spread on rolls
6. Top each "burger" with onions and 3-4 basil leaves. Top with second half of roll and enjoy!


SECOND PLACE
Awesome Andrade Nopale & Jalapeno Burger by Mary Andrade
To livin'up any grilled item, take veggies, in this case Nopales (cactus) and red onions, from the garden and throw them on the grill as a topper. Add fresh tomato, whole wheat buns, and any exotic condiments you like, and you are good to go!

To grill nopales:
1. You can buy large 'leaves' of nopal in the grocery store, or find them in many gardens. Carefully remove spikes with a sharp knife, if they are still attached.
2. Wash nopal well and then slice into long, thin strips, about 1/2 inch wide. Nopales have a very thick juice that starts to ooze out as soon as you cut them, so when you are done cutting your strips, rinse again well under cool water.
3. Add a dash of salt, and you are ready to grill. To grill, you can use a veggie basket, which is easier to manage, aluminum foil, or you can just throw them right on the grill.
4. Nopales are done when they have grill marks and look slightly wilted. They add a tangy zip to any BBQed meal!

THIRD PLACE
Maple Apricot-Glazed Salmon by the Johnsons

Ingredients:
2 cedar planks, soaked in water for 2 hours
4-6 salmon filets
salt and pepper
ground ginger
1/4 cup maple syrup
1/4 cup apricot preserves
1 1/2 tablespoons brown sugar
1 teaspoon coarse ground mustard
1 1/2 tablespoons orange juice

Directions:
1. Rinse salmon and pat dry with paper towels. Place in a large shallow baking dish. Season with salt, pepper and dash of ginger.
2. In medium bowl, combine maple syrup, apricot preserves, brown sugar, mustard and orange juice. Pour over salmon.
3. Prepare planks for grilling. Put salmon on planks. Close lid of grill and cook for about 15 minutes until fish begins to flake.
4. Remove fish from grill and allow to sit for 5 minutes before serving.

Recipe of the Week: Amish Friendship Bread - all the sweetness with a healthy twist

My friend Paula is the first one who gave me the starter for this fabulous cinnamon bread. I modified the original recipe (Hopefully, the Amish don't get mad) so it's a bit healthier. If you want some of the starter, please let me know and I can pass it on. The starter is made over 10 days and then you bake the bread. Some call it Pass-It-Along Bread. It's fabulous for breakfast or for dessert.

Amish Friendship Bread
NOTES:
-Do NOT use any type of METAL SPOON OR BOWL for mixing.
-Do NOT refrigerate.
-When the bag fills with air, let it out.
-It is normal for the bag to rise, bubble and ferment. This is part of the process.
*I modified the recipe I was given by my friend to give it a healthier twist. My modifications are in parentheses.

Day 1 – Do nothing.
Day 2, 3, 4 & 5 – Mush the starter bag with your fingers to mix dough.
Day 6 – Add the following ingredients & mush bag:
1 cup of milk (raw)
1 cup of flour (whole wheat white or whole wheat pastry)
1 cup of sugar (evaporated cane juice or raw turbinado sugar)
Day 7, 8 & 9 – Mush the bag

Day 10 –
1. Pour entire contents into a NON-METAL bowl
2. Add & mix
a. 1 ½ cups of flour (I used whole wheat pastry flour.)
b. 1 cup of sugar (1/2 cup evaporated cane juice/raw organic sugar)
c. 1 ½ cups of milk (raw)
3. Measure out 4 separate batters of 1 cup each into four one-gallon Ziploc bags. This is called a starter. Keep one for yourself and give the other three to friends along with a copy of the recipe. Be sure to mark the bags with today’s date.
4. Preheat the oven to 325 degrees.
5. To the remaining batter in the bowl, add:
a. 1 large box instant vanilla pudding (I use the Trader Joe's brand because of all the unhealthy stuff in most instant pudding like preservatives, aspartame and dyes.)
b. 3 eggs (cage-free)
c. 1 cup oil (1 cup applesauce or plain yogurt)
d. ½ cup milk (raw)
e. ½ cup sugar (evaporated cane juice/raw organic sugar)
f. ½ teaspoon vanilla
g. 2 teaspoons baking powder
h. ½ teaspoon baking soda
i. ½ teaspoon salt
j. 2 teaspoons cinnamon
k. 2 cups flour (whole wheat pastry flour)
l. (1/4 cup ground flaxseed)

6. Grease two large loaf pans or 4 mini loaves and mix additional ¼ cup sugar with 2 teaspoons cinnamon. Dust the greased pans with half the cinnamon-sugar.
7. Pour the batter evenly into loaf pans and sprinkle with second half of cinnamon sugar.
8. Bake ONE HOUR. Cool until bread loosens from pans evenly (about 10 minutes). Turn out onto a serving dish and serve warm or cold.

Here are some other fun variations of the bread I found. Our fave variations are to add 1/2 cup of raisins to the batter or to sprinkle the top of mini loaves with chocolate chips.

Chocolate Lover's Dream: Recipes for Valentine Desserts

Maybe it's because I'm pregnant and chocolate is my craving. Maybe it's because February means Valentine's Day, which means there is an abundance of chocolate and desserts in every store, restaurant and on every advertisement. Whatever the reason, I have chocolate on the brain. This is actually a repost from last February but I had to share this Chocolate Lava Cake recipe with some of our new readers. Dark chocolate is definitely the way to go.

What's the skinny on dark chocolate? They say dark chocolate is a potent antioxidant - great for combatting high blood pressure and other diseases. (You don't have to twist my arm!) Of course, pay attention to sugar additives and avoid milk chocolate or white chocolate. Those don't count. Trader Joe's now sells organic free trade dark chocolate bars. Also check out Whole Foods, Kristina's Market and some conventional grocery stores.




Here's a twist on Ghirardelli Chocolate Lava Cakes - great for Valentine's Day treats, Saturday desserts or anytime you want to impress your guests. You will need ramekins or other small pyrex dishes to bake them in. I bought heart-shaped foil pans at Dollar Tree to give them a Hearts Day flair for the fam. Serve them up warm and you will be the new queen or king of the house.

Makes 8 cakes

Ingredients:

Center:
1/2 (2 oz.) dark chocolate (60% bittersweet Cacao or more)
1/4 cup heavy cream or raw milk

Cakes:
olive oil cooking spray
1 bar (4 oz.) dark chocolate (60% bittersweet Cacao or more)
8 tablespoons organic unsalted butter
2 whole cage-free eggs
2 cage-free egg yolks
1/3 cup sucanat (available at health food stores like Whole Foods) or 1/4 cup organic raw sugar
1/2 teaspoon vanilla extract
1/4 cup whole wheat pastry flour

Garnish:
Fresh organic raspberries or strawberries
Mint leaves
Organic Chocolate Moo sauce (available at Trader Joe's)

Directions:
1. To make centers, melt chocolate and cream in a double boiler. (If you don't have a double boiler, set a sturdy glass bowl on a top of a small saucepan 1/4 filled with water.) When chocolate melts, whisk gently to blend. Refrigerate for 1 hour or until firm. Form into 6-8 small balls, depending on how many cakes you want to make.
2. To make cake, heat oven to 400 degrees. Spray ramekins or tins with olive oil spray.
3. Melt chocolate and butter in double boiler and whisk to blend.
4. With an electric mixer, whisk yolks, sugar and vanilla on high speed about 5 minutes or until thick and light. You will notice the change in consistency.
5. Fold melted chocolate into egg mixtures until combined.
6. Spoon batter into ramekins or tins. Place one chocolate ball in the middle of each ramekin.
7. Bake about 15 minutes until cake is firm to the touch.
8. Cool for 5 minutes then invert onto your serving plate and garnish.





Another new recipe I stole from my mom is for Chocolate-Dipped Granola Cookies. She served this one for guests with chocolate-dipped strawberries - another family fave with a healthy twist. We all were fighting over these cookies. This is from the 101 Cookies recipe book and we tweaked it to add more healthy ingredients. Enjoy!



CHOCOLATE-DIPPED ORANGE GRANOLA COOKIES

Ingredients:
2 cups organic uncooked oats
1/2 cup organic brown sugar
1/2 cup organic butter, melted
1/2 cup walnuts, chopped
2 cage-free eggs
2 teaspoons orange peel, grated
1/4 teaspoon salt
1 12-oz. package semi-sweet or dark chocolate chips

Makes 2 dozen cookies

1. Combine all ingredients except chocolate chips until blended.
2. Cover & refrigerate overnight.
3. Preheat oven to 350 degrees.
4. Lightly grease cookie sheets or line with parchment paper.
5. Use a tablespoon or (Pampered Chef) cookie scoop to shape oat mixture into golf ball-sized mounds.
6. Place 2 inches apart on prepared cookie sheets.
7. Bake 10-12 minutes until golden & crisp.
8. Cool 10 minutes on wire racks.
9. Melt chocolate chips
10. Dip tops of cookies one at a time into melted chocolate or spoon a small amount of chocolate on top of cookies to form a small circle of chocolate.
11. Place on wax paper until chocolate is set.

Recipe of the Week: Chocolate-Banana-Oatmeal Power Cookies

Here's a great cookie for a car snack or a hike that incorporates loads of healthful ingredients. The taste is almost like banana bread meets a chewy oatmeal cookie.

Ingredients:
3/4 cup coconut palm sugar or raw organic sugar
1/2 cup organic butter
1 ripe banana
1 egg
1 cup whole wheat pastry flour
1 cup unsweetened coconut
1/2 cup oats
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon ground flaxseed
3 teaspoons organic cocoa powder
1/2 cup raisins, craisins or dried apricots
1/2 cup walnuts, chopped
1/2 cup dark or semi-sweet chocolate chips

Makes approximately 2 dozen cookies.

1. Preheat oven to 350 degrees. Blend butter and sugar. Add egg and mashed banana.
2. Add flour, coconut, oats, baking soda, salt, cinnamon, flaxseed and cocoa powder. Blend.
3. Stir in raisins, nuts and chocolate chips.
4. Drop by spoonfuls onto greased cookie sheet.
5. Bake approximately 12 minutes.

Recipe of the Week: Chocolate Truffle Peppermint Cookies


Ingredients:
6 squares/ounces baker's dark chocolate (I use Ghirardelli brand or dark chocolate chips.)
3/4 cup (organic) butter
1/2 cup (organic) raw sugar
2 (cage-free) eggs
1 3/4 cup whole wheat pastry flour
1/2 teaspoon baking powder
1/3 cup chopped candy canes

1. Melt chocolate and butter in a double boiler or in a glass bowl on top of a pot of boiling water. When melted, stir together with a whisk.
2. Stir in sugar.
3. Whisk in eggs one at a time, mixing well, until blended.
4. Add flour and baking powder and mix well. (Dough will be very soft.)
5. Cover and refrigerate at least 2 hours or overnight.
6. Preheat oven to 350 degrees.
7. Roll into 1-inch balls. Place on a greased baking sheet.
8. Bake 10-12 minutes. Sprinkle immediately with crushed candy canes. Cool and remove from pans.

Recipes of the Week: Persimmon Party


Wondering what to do with all those extra persimmons? Have you seen this elusive orange fruit in the grocery store or at the farmer's market and wondered how to employ it in your favorite dishes. According to Eating Well magazine, persimmons provide half the Vitamin C and one quarter the fiber we need daily. The "fuyu" persimmon is like an orange, squatty tomato and firm when ripe. These are great in place of apples or pears in your fave dishes. The "hachiya" persimmon is the acorn-shaped variety that becomes mushy to the touch when ripe and can be squeezed out to use in smoothies or for baked goods like cookies and breads. Here are some of our recipes using the persimmon. (Please share some of your creative uses for the persimmon!)


Baby Greens Salad with Fuyu Persimmons

Ingredients:
1 package mixed baby greens or fresh organic greens of your choice
2 thinly sliced fuyu persimmons
1 thinly sliced small red onion
1 container 4 oz. feta cheese or goat cheese

1. Arrange salad in a bowl.
2. Make dressing. Easy Dressing: Add 3/4 salad oil to a small mason jar.
3. Mix in 1 T. apple juice, 1 t. lime juice and 1 t. mixed herbs (1/4 t. basil, 1/4 t. oregano, 1/4 t. rosemary, 1/4 t. mint)
4. Shake jar and pour over salad.


Baked Salmon with persimmon salsa


1 large-2 medium salmon fillets

sea salt & pepper to taste

1/2 teaspoon basil

1/2 teaspoon oregano

1/2 teaspoon coriander

1/2 teaspoon garlic powder

1/2 teaspoon lemon pepper


Salsa:

1 red onion

1 red or yellow pepper

1 orange

1 cup fuyu persimmon

1/2 cup finely chopped cilantro

1/2 jalapeno or pepper of your choice, depending on how much heat you want

Ingredients:

1/2 cup butter, organic softened
3/4 cup honey
1 egg
2 1/4 cups whole wheat pastry flour (or other flour)
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/8 teaspoon ground cloves
1/2 teaspoon salt
1 cup persimmon pulp (2-3 soft & peeled)

1 cup raisins
1 cup walnuts, chopped
1 cup semi-sweet or carob-sweetened chocolate chips, optional

1. Cream together butter & honey.
2. Beat in egg.
3. Sift dry ingredients and add to butter mixture.
4. Stir in nuts, raisins and chocolate chips.
5. Lightly grease cookie sheet and drop tablespoons full onto sheet.
6. Bake at 350 degrees for about 20 minutes until golden brown on top.

Recipe of the Week: Harvest Banana-pumpkin Cupcakes with Honey-cream Cheese Frosting



If you're looking for a fun activity to do with your family for Halloween or Thanksgiving, try these healthy-yummy cupcakes and decorate them together. Serve them up for a boo-tiful addition to your harvest party. This recipe also makes great mini loaves that you can wrap in foil and tie with a ribbon for a holiday Housewarming gift or serve at your Thanksgiving brunch.

Halloween Banana-Pumpkin Cupcakes
with Honey-Cream Cheese Frosting

3 cups flour (I use 1 cup unbleached white and 2 cups whole wheat or spelt)
4 teaspoons baking powder
4 teaspoons cinnamon
2 teaspoons ground ginger
2 teaspoons baking soda
1 teaspoon flaxseed (optional)
1/2 teaspoon salt
1 15-oz. can pumpkin (100% pure)*
4 large eggs
1 cup honey or 1 1/4 cup organic brown sugar
2 medium mashed bananas
3/4 cup butter, softened
1/2 bag chocolate chips (optional)
1 cup chopped walnuts (optional)

Frosting:
1 8-oz package cream cheese
1/4 cup honey (or until consistency you like)

Garnishes:
1/2 bag chocolate chips
chocolate-covered sunflower seeds (They sell them at Whole Foods or Trader Joe's and they're a great alternative to M&Ms with no harmful dyes!)
mint leaves for the green pumpkin stem

Makes 24 muffins + 3 mini loaves or 2 large loaves (cook 1 hour).

1. Heat oven to 350 degrees. Grease 2 muffin tins or use paper cups.
2. Mix eggs, butter, honey/sugar, pumpkin and banana.
3. Mix in dry ingredients.
4. Add chocolate chips & nuts. Do not overmix.
5. Pour into loaf pans and bake 25-30 minutes or until wooden pick inserted in the center comes out clean.
6. Cool completely on rack. Meanwhile, add softened cream cheese to mixer. Blend until smooth. Add a bit of honey to the consistency you want for your frosting - not too runny.
7. Frost with cream cheese frosting. Garnish with chocolate-covered sunflower seeds or remaining chocolate chips used to make jack-o-lantern faces. Mint leaves make fun all-natural pumpkin stems. (We skip the frosting for the mini loaves so they keep longer.)

Recipe of the Week: Chocolate Oatmeal Pumpkin Cookies


Ok, friends. I know some of you have been begging me for this recipe. I've been on a quest for a long time for a "healthy" but yummy cookie. I think I found one - at least one that passes our family's chewy, chocolatey, yummy test. I have to give a nod to my friend Lisa Pearmain from Arizona who inspired this recipe. She served up her own version this summer. I've doctored it a bit to make it with a healthy twist.

1 cups whole wheat pastry flour
2 cups quick or old fashioned oats uncooked
1 teaspoon aluminum-free baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup butter, softened
1/2 cup plain yogurt
1/2 cup organic raw brown sugar
1 slightly beaten egg
1 teaspoon vanilla extract
1 cup organic canned pumpkin (found in baking section of market)
1 cup dark chocolate chips

1. Preheat oven to 350 degrees.
2. Combine flour, oats, baking soda, cinnamon and salt.
3. Mix butter and yogurt then gradually brown sugar.
4. Add egg and vanilla, mixing well.
5. Mix in pumpkin and then stir in chocolate chips.
6. Bake 18-20 minutes or until cookies are firm and lightly browned. Cool then eat or store!

Note: Makes about 3 dozen cookies if you use heaping teaspoon size dough. I double the recipe because one can 15-ounce pumpkin has 2 cups as does a package of chocolate chips. Not to mention, these cookies go fast. Enjoy!

The flavors of summer are starting to appear at the farmer's market and on our plates. We've moved much of our cooking to the grill and our dinners to the patio to enjoy the cooler Fresno nights. My cooking tip this week is to make some meals like enchiladas and stuffed manicotti that I can make in quantity and freeze or share with friends who have recently had babies and need a little extra help in the dinner department.
