Friday Pantry Challenge: Egg Salad Three Different Ways

Admittedly, Day 5 has been the hardest because we were used to the challenge but the refrigerator was looking more and more depressing. My eldest daughter also came down with a runny nose. Usually I would work to cure that with a tall smoothie and a bowl of berries or other antioxidants. My choices were slim since we have no more fruit and no freezer stash either. I poured a cup of raw milk, found an Airborne tablet in the cabinet and added that to a glass of water and hoped for the best. In many ways, we could probably go a few more weeks on this challenge but in the fresh fruit department we would be compromising our health if I don't head to the farmer's market this weekend! Lesson learned.
I was still determined to be creative and have a good attitude today about eating what we have. After all, people in the Developing World have maybe one or two - if any - choices a day. My whining would be embarassing.

My creativity today included my own "Pumpkin Oatmeal" by adding 1 tablespoon pumpkin puree along with 1 tablespoon organic raisins to a bowl of oatmeal. I sprinkled the top with cinnamon and the result was a yummy different flavor. (If you want to sweeten it, try a drizzle of a natural sweetener like honey or maple syrup and throw in some nuts for good omega-3s.) My hubby is the type who could eat the same granola for breakfast and the identical sandwich for lunch day after day. Not me. I need variety and so does my daughter.

This afternoon I realized that are usual stash of fruit, veggies and whole grain bars that we use for snacks was seriously depleted so Meilani and I used the last zucchini to make Zookies. This is a recipe we got from a friend and it incorporates healthy plus yummy (chocolate!) all into one great little cookie. Our friend's daughter calls them "Vegetable Cookies" because you can see the shredded zucchini inside but that didn't deter us. They taste like a chocolate-chip macaroon with the extra zest of zucchini flavor.

For lunch, I decided to be creative with Egg Salad. Now I know most people hear "egg salad" and think boring, blah and maybe even barf. But when I'm looking at a nearly-empy refrigerator with more than a dozen eggs left I'm thinking Egg Salad = Extra Special. My first version of Egg Salad earlier this week was a twist on my Curried Chicken Salad, a regular on our lunch menu. My classic version of Egg Salad is an Italian Egg Salad. Must be my roots but I tend to gravitate toward oregano, basil and bay leaves when it comes to the spice department. Our Classic Egg Salad includes those things. The new "snazzy" egg salad we made today used the rest of yesterday's "spiced aioli sauce" from our Baked Sweet Potato Fries. The result was a new salad with incredible nuances of flavor. Meilani and I gobbled ours down. (Recipes below.)

Our dinner tonight was a mainstay for Friday nights - pizza! There's something about Friday that just makes me crave pizza. It's also a great chance to use some of the extras from the week for creative ingredients. Since we've been doing The Great Pantry Challenge this week there wasn't much left in our produce drawers in the fridge. We did find green peppers and basil. We also opened our last can of sliced black olives to top off our Veggie Pizza. And, thank you, God, we had just enough cheese. Tomorrow is our grand finale day - we will see what it holds.

A Note from our Nutrition Guy (aka my Hubby)

A lot of people have misconceptions about the healthiness of eggs. Several years back Americans got all up in arms about eggs causing high cholesterol. The truth of it is that God created eggs as a perfect protein. Usually people who have cholesterol issues do not have it because of their consumption of eggs. Not only have studies shown that eggs do not significantly affect cholesterol levels, but the latest research suggests that eating whole eggs (both whites and yolks) may actually result in improvement in a person's blood lipids (cholesterol) profile.
When we buy eggs, we want the freshest eggs possible. The A Choice would be to buy from a local farm. In Fresno, we get our eggs from Simonian Farms in the Valley. There's also a new egg vendor at the Vineyard Farmer's Market on Shaw & Blackstone. These are fresh eggs laid by cage-free chickens who have been fed organic food. The B Choice would be to buy cage-free organic eggs from a grocery store like Trader Joe's or Costco. The difference is these eggs are from a bigger operation where the stress on the chickens could be more. Stressed out chickens do not lay healthy eggs.


Curried Egg Salad

6  hard-boiled eggs, finely chopped

1/2 teaspoon salt
1/2 teaspoon lemon pepper
1 teaspoon curry powder (I use the Frontier Indian Curry powder from Whole Foods, which is a salt-free, all-natural blend)
1 small zucchini, finely chopped (about 1/2 cup)
1 tablespoon parsley, minced
3 tablespoons dried cranberries or raisins
1/4 cup pecans, coarsely chopped
1 cup mayonnaise

1. Boil eggs. Meanwhile, chop zucchini and combine with salt, pepper, curry, parsley, cranberries and pecans.
2. Chop eggs.
3. Blend eggs with mayonnaise and add spice-vegetable mixture. Serve on your favorite bread.



Italian Egg Salad

6 hard-boiled eggs, finely chopped
1 cup celery, finely chopped

1/2 teaspoon salt
1/2 teaspoon lemon pepper
1 teaspoon oregano
1 teaspoon basil (dried or fresh)
1 teaspoon chopped bay leaf
1 tablespoon fresh parsley

1. Boil eggs. Meanwhile, chop celery and combine with salt, pepper, oregano, basil, bay leaf and parsley.

2. Chop eggs.
3. Blend eggs with mayonnaise and add spice-celery mixture. Serve on your favorite bread.

 
Spiced Egg Salad

6 hard-boiled eggs, finely chopped

1/2 teaspoon salt
1/2 teaspoon lemon pepper
1 teaspoon cumin
1 teaspoon coriander
1 tablespoon cilantro or fresh basil, finely chopped
1 cup mayonnaise

1. Boil eggs. Meanwhile, chop celery and combine with salt, pepper, cumin, coriander and cilantro.

2. Chop eggs.
3. Blend eggs with mayonnaise and add spice mixture. Serve on your favorite bread.

Recipe of the Week: Chocolate Chip Zucchini cookies - Zookies

Zucchini is starting to appear at the farmer's markets and in my friends' backyards here in Fresno. What to do with this abundance of zucchini? My friend Brandy Freeland shared this recipe for "zookies" with me. I changed it up to make it my own. These cookies are light and buttery in taste with the consistency of a coconut macaroon. These are a great way to sneak some squash into your kids' snack time. And who can go wrong with some dark chocolate morsels to feed your chocolate cravings?

Ingredients:

1/2 cup organic butter, softened

1/4 cup 100% pure maple syrup

1 cage-free, organic egg

1/2 teaspoon organic vanilla

1 cup whole wheat pastry flour

1/2 teaspoon baking soda

1/2 teaspoon sea salt

2 cups organic zucchini, shredded

1 cup oats

3/4 cup coconut, shredded

1 cup dark chocolate chips


Directions:

1. In a large bowl, cream together the butter and maple syrup.
2. Add the egg and vanilla. Beat well.
3. Sift in the flour, baking soda, and salt. Mix just until incorporated.
4. Stir in the shredded zucchini, oats and coconut.
5. Stir in dark chocolate chips.
6. Drop the dough by the tablespoonful onto greased cookie sheets. Flatten slightly with spatula.
7. Bake at 350 degrees for 12-14 minutes until golden brown on the edges.

Makes 2 dozen cookies.

Chocolate Lover's Dream: Recipes for Valentine Desserts

Maybe it's because I'm pregnant and chocolate is my craving. Maybe it's because February means Valentine's Day, which means there is an abundance of chocolate and desserts in every store, restaurant and on every advertisement. Whatever the reason, I have chocolate on the brain. This is actually a repost from last February but I had to share this Chocolate Lava Cake recipe with some of our new readers. Dark chocolate is definitely the way to go.

What's the skinny on dark chocolate? They say dark chocolate is a potent antioxidant - great for combatting high blood pressure and other diseases. (You don't have to twist my arm!) Of course, pay attention to sugar additives and avoid milk chocolate or white chocolate. Those don't count. Trader Joe's now sells organic free trade dark chocolate bars. Also check out Whole Foods, Kristina's Market and some conventional grocery stores.




Here's a twist on Ghirardelli Chocolate Lava Cakes - great for Valentine's Day treats, Saturday desserts or anytime you want to impress your guests. You will need ramekins or other small pyrex dishes to bake them in. I bought heart-shaped foil pans at Dollar Tree to give them a Hearts Day flair for the fam. Serve them up warm and you will be the new queen or king of the house.

Makes 8 cakes

Ingredients:

Center:
1/2 (2 oz.) dark chocolate (60% bittersweet Cacao or more)
1/4 cup heavy cream or raw milk

Cakes:
olive oil cooking spray
1 bar (4 oz.) dark chocolate (60% bittersweet Cacao or more)
8 tablespoons organic unsalted butter
2 whole cage-free eggs
2 cage-free egg yolks
1/3 cup sucanat (available at health food stores like Whole Foods) or 1/4 cup organic raw sugar
1/2 teaspoon vanilla extract
1/4 cup whole wheat pastry flour

Garnish:
Fresh organic raspberries or strawberries
Mint leaves
Organic Chocolate Moo sauce (available at Trader Joe's)

Directions:
1. To make centers, melt chocolate and cream in a double boiler. (If you don't have a double boiler, set a sturdy glass bowl on a top of a small saucepan 1/4 filled with water.) When chocolate melts, whisk gently to blend. Refrigerate for 1 hour or until firm. Form into 6-8 small balls, depending on how many cakes you want to make.
2. To make cake, heat oven to 400 degrees. Spray ramekins or tins with olive oil spray.
3. Melt chocolate and butter in double boiler and whisk to blend.
4. With an electric mixer, whisk yolks, sugar and vanilla on high speed about 5 minutes or until thick and light. You will notice the change in consistency.
5. Fold melted chocolate into egg mixtures until combined.
6. Spoon batter into ramekins or tins. Place one chocolate ball in the middle of each ramekin.
7. Bake about 15 minutes until cake is firm to the touch.
8. Cool for 5 minutes then invert onto your serving plate and garnish.





Another new recipe I stole from my mom is for Chocolate-Dipped Granola Cookies. She served this one for guests with chocolate-dipped strawberries - another family fave with a healthy twist. We all were fighting over these cookies. This is from the 101 Cookies recipe book and we tweaked it to add more healthy ingredients. Enjoy!



CHOCOLATE-DIPPED ORANGE GRANOLA COOKIES

Ingredients:
2 cups organic uncooked oats
1/2 cup organic brown sugar
1/2 cup organic butter, melted
1/2 cup walnuts, chopped
2 cage-free eggs
2 teaspoons orange peel, grated
1/4 teaspoon salt
1 12-oz. package semi-sweet or dark chocolate chips

Makes 2 dozen cookies

1. Combine all ingredients except chocolate chips until blended.
2. Cover & refrigerate overnight.
3. Preheat oven to 350 degrees.
4. Lightly grease cookie sheets or line with parchment paper.
5. Use a tablespoon or (Pampered Chef) cookie scoop to shape oat mixture into golf ball-sized mounds.
6. Place 2 inches apart on prepared cookie sheets.
7. Bake 10-12 minutes until golden & crisp.
8. Cool 10 minutes on wire racks.
9. Melt chocolate chips
10. Dip tops of cookies one at a time into melted chocolate or spoon a small amount of chocolate on top of cookies to form a small circle of chocolate.
11. Place on wax paper until chocolate is set.

Recipe of the Week: Chocolate-Banana-Oatmeal Power Cookies

Here's a great cookie for a car snack or a hike that incorporates loads of healthful ingredients. The taste is almost like banana bread meets a chewy oatmeal cookie.

Ingredients:
3/4 cup coconut palm sugar or raw organic sugar
1/2 cup organic butter
1 ripe banana
1 egg
1 cup whole wheat pastry flour
1 cup unsweetened coconut
1/2 cup oats
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon ground flaxseed
3 teaspoons organic cocoa powder
1/2 cup raisins, craisins or dried apricots
1/2 cup walnuts, chopped
1/2 cup dark or semi-sweet chocolate chips

Makes approximately 2 dozen cookies.

1. Preheat oven to 350 degrees. Blend butter and sugar. Add egg and mashed banana.
2. Add flour, coconut, oats, baking soda, salt, cinnamon, flaxseed and cocoa powder. Blend.
3. Stir in raisins, nuts and chocolate chips.
4. Drop by spoonfuls onto greased cookie sheet.
5. Bake approximately 12 minutes.

Recipes of the Week: Persimmon Party


Wondering what to do with all those extra persimmons? Have you seen this elusive orange fruit in the grocery store or at the farmer's market and wondered how to employ it in your favorite dishes. According to Eating Well magazine, persimmons provide half the Vitamin C and one quarter the fiber we need daily. The "fuyu" persimmon is like an orange, squatty tomato and firm when ripe. These are great in place of apples or pears in your fave dishes. The "hachiya" persimmon is the acorn-shaped variety that becomes mushy to the touch when ripe and can be squeezed out to use in smoothies or for baked goods like cookies and breads. Here are some of our recipes using the persimmon. (Please share some of your creative uses for the persimmon!)


Baby Greens Salad with Fuyu Persimmons

Ingredients:
1 package mixed baby greens or fresh organic greens of your choice
2 thinly sliced fuyu persimmons
1 thinly sliced small red onion
1 container 4 oz. feta cheese or goat cheese

1. Arrange salad in a bowl.
2. Make dressing. Easy Dressing: Add 3/4 salad oil to a small mason jar.
3. Mix in 1 T. apple juice, 1 t. lime juice and 1 t. mixed herbs (1/4 t. basil, 1/4 t. oregano, 1/4 t. rosemary, 1/4 t. mint)
4. Shake jar and pour over salad.


Baked Salmon with persimmon salsa


1 large-2 medium salmon fillets

sea salt & pepper to taste

1/2 teaspoon basil

1/2 teaspoon oregano

1/2 teaspoon coriander

1/2 teaspoon garlic powder

1/2 teaspoon lemon pepper


Salsa:

1 red onion

1 red or yellow pepper

1 orange

1 cup fuyu persimmon

1/2 cup finely chopped cilantro

1/2 jalapeno or pepper of your choice, depending on how much heat you want



1. Coat 1 large salmon fillet big enough for your family with olive oil. (We get it from Costco or Trader Joe's - You can substitute in the kind of fish of your choice. Mahi mahi is another one of our faves.)

2. Sprinkle with sea salt & pepper

3. Rub on mix of herbs, such as basil, oregano, coriander, garlic, lemon pepper and/or chili pepper.

4. Let salmon sit in a dish or on a platter and prepare the salsa in a small bowl.

5. Chop 1 red onion, 1 red or yellow pepper, 1 orange, 1 cup fuyu persimmon, 1/2 cup finely chopped cilantro and 1/2 jalapeno (or pepper of choice) finely minced. Make sure everything is in bite-sized pieces or smaller and stir together.

6. Add 1 tablespoon olive oil. (You can make this salsa ahead of time and reserve in ziplock bag)6. Grill the salmon approximately 10-15 minutes, depending on your grill and the size of your fillet. Watch for when the white fat juices start to ooze out the top and the salmon meat is flaky at the touch of a fork. Then it's done. You only need to grill on one side.

7. Top with persimmon salsa and serve with rice or potatoes or other favorite side.


Persimmon & Honey Cookies

Ingredients:

1/2 cup butter, organic softened
3/4 cup honey
1 egg
2 1/4 cups whole wheat pastry flour (or other flour)
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/8 teaspoon ground cloves
1/2 teaspoon salt
1 cup persimmon pulp (2-3 soft & peeled)

1 cup raisins
1 cup walnuts, chopped
1 cup semi-sweet or carob-sweetened chocolate chips, optional

1. Cream together butter & honey.
2. Beat in egg.
3. Sift dry ingredients and add to butter mixture.
4. Stir in nuts, raisins and chocolate chips.
5. Lightly grease cookie sheet and drop tablespoons full onto sheet.
6. Bake at 350 degrees for about 20 minutes until golden brown on top.

Recipe of the Week: Chocolate Oatmeal Pumpkin Cookies


Ok, friends. I know some of you have been begging me for this recipe. I've been on a quest for a long time for a "healthy" but yummy cookie. I think I found one - at least one that passes our family's chewy, chocolatey, yummy test. I have to give a nod to my friend Lisa Pearmain from Arizona who inspired this recipe. She served up her own version this summer. I've doctored it a bit to make it with a healthy twist.

1 cups whole wheat pastry flour
2 cups quick or old fashioned oats uncooked
1 teaspoon aluminum-free baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup butter, softened
1/2 cup plain yogurt
1/2 cup organic raw brown sugar
1 slightly beaten egg
1 teaspoon vanilla extract
1 cup organic canned pumpkin (found in baking section of market)
1 cup dark chocolate chips

1. Preheat oven to 350 degrees.
2. Combine flour, oats, baking soda, cinnamon and salt.
3. Mix butter and yogurt then gradually brown sugar.
4. Add egg and vanilla, mixing well.
5. Mix in pumpkin and then stir in chocolate chips.
6. Bake 18-20 minutes or until cookies are firm and lightly browned. Cool then eat or store!

Note: Makes about 3 dozen cookies if you use heaping teaspoon size dough. I double the recipe because one can 15-ounce pumpkin has 2 cups as does a package of chocolate chips. Not to mention, these cookies go fast. Enjoy!
